Eiteljorg Cafe – Quesadilla of the Day

The Eiteljorg Cafe is a true gem of downtown Indianapolis. If you are visiting the Eiteljorg Museum or needing a great southwestern inspired lunch break you have to try the Eiteljorg Cafe. I was able to stop in this past week and try one of their popular items the Quesadilla of the Day. Each day a new quesadilla is created by one of the employees with great flavor. On this Friday afternoon it was Cheesy Fried Chicken and Bacon quesadilla.

Michael took me through the steps of creating one of these delicious dishes.

1. Add freshly grated cheese. (A favorite blend of your own, or we recommend Colby Jack for this quesadilla)

2. Place fried chicken on top of first layer of cheese.

3. Add roasted tomatoes and bacon.

4. Add final layer of shredded cheese.

5. Fold and grill for approximately 3 to 4 minutes on a low/medium heat. Once the tortilla is golden brown remove and cut into four triangles.

6. Finally garnish with sour cream, fresh guacamole, pico de gallo, and a roasted jalapeno pepper.

I have had many different quesadillas of the day and this one was, along with the others, fabulously delicious. Come out and try one for yourself; just ask the associate what the quesadilla of the day is and enjoy!
